Pizza!

I'm still experimenting with this one, so feel free to play around with it.

2 cups flour
2 cups instant potato flakes (makes it taste a little like Pringles)
2 teaspoons salt
1 teaspoon instant yeast
1 teaspoon baking powder
1/4 cup olive oil
2 cups cold water

Stir together the flour, salt, and yeast in a large bowl. When mixed, add the water and olive oil. Begin stirring as you slowly add the potato flakes. The odds are you will use a little less than the whole two cups. You want your mix to be dough-like and not too much like thick mashed potatoes. You can adjust the texture by adding more flour later. The finished dough should be springy, elastic, and sticky.

Cover the bowl in foil or plastic wrap (very important unless you like picking off a dry film) and put in the refrigerator over night or up to 3 days. This gives the yeast time to do its work. You should come back the next day to find that it has expanded. Prepare a clean surface to work on. Flour the surface, your hands, and put some flour on top of the dough. Begin kneading it on the surface, adding more flour as you go, until you can work with the dough without it overly sticking to your hands. Pull off a ball of the dough and begin stretching it out. This recipe works best with thinner crusts, not so good with deep dish. Lay it out onto your pan.

Set the oven to 400 degrees. Take some butter and melt it in the microwave. Pour it onto, and spread it around, the dough. Coat to your taste. Place the plain dough in the oven to pre-bake for 5 to 7 mins. You should see air bubbles begin to form. Take the dough out and top with your choice of sauce, cheese, and meat. Don't go overboard, you want a good mix of flavors. Put back in the oven for another 7 to 10 mins. Don't walk away from it! Keep an eye on the pizza! Take it out when you feel it has browned enough to your taste.
